Research Interests: Fibro-adipogenic progenitor cells are stem cells responsible for extracellular matrix deposition and generation of intramuscular adipocytes in skeletal muscle. My research centers on understanding and directing these cells' behavior with the goal to improve meat quality in beef production and cultivated meat.
